Talking of Freezers...

What an interesting post over at Heavenly Homemakers. It shows the inside (by request) of the family freezer. It was very interesting. I thought I'd show you mine.

It is more embarassing than I first thought. No I didn't put away the meat!




Here is my pic. Yes, I suppose I could have tidied it up first. Usually it is reasonably neat. Since then the bread has been delivered and it is full I think. We get 23 loaves. The meat will last until the end of my menu. At the time of the photo we were at day 5 of 14. This shopping week is the first time I can remember that I have bought pork schnitzel. The recipe I chose from the Taste site, I ended up finding in an old magazine. My husband had tidied up the cookbooks and I decided I could make some room for our new cookbooks we got at the op-shop by taking the magazines away.


The place I keep my recipes is a kauri pine dresser.

Why was the cheese in the freezer? We freeze it when we don't want the kids to eat it until we are ready. It was for Cauliflower & Bacon and Macaroni Cheese. The berries are the last thing I had to use up from the Chrisco, Castle and Hamper King deliveries before Christmas.

At the top I have souvlaki bread, and I think pita bread. I think I have polish sausage in there. I am so silly, I seem to hang out for Rookwurst for making Bigos. This time I am using a recipe that says Polish Sausage is OK. I'm sure my original recipe would have been fine all along with Polish Sausage. It is getting harder and harder for me to buy cheap pancetta and prosciutto, and things like that. I think I liked to buy Knackwurst too, but my shop doesn't stock it anymore.

You may notice the freezer thermometer. We try to keep it at -15oC. If it gets up to -10oC hubby defrosts it. We don't know where the locals get their freezers serviced. We have taken ours to our hometown, but I suspect we need a new freezer.

Speaking of stockpiling. I have been reading an interesting book so far (it may get too scarey for me) called Last Light by Terri Blackstock. It starts off where everyone's electronic gadgets stop working. Their cars are the most noticeable at the start. The atms, the phones etc. After the fires in Victoria it seems to fit in, about being prepared. At the moment in the book, the Mum is looking in her freezer to see how much food there is.

Lentil Soup with Knackwurst

1 pound lentils -- rinsed and drained
2 medium onions -- chopped
2 medium carrots -- chopped
1 medium red bell pepper -- chopped
2 cloves garlic -- minced
1 small dried red hot chile, crushed
1 teaspoon dried rosemary
1/4 teaspoon pepper
2 10 oz cans beef broth
3 cups water
1 8 oz can tomato sauce
1 pound knackwurst*
2 tablespoons red wine vinegar

Preparation:
*Can use Kielbasa, cut either into 1/2" thick slices. In large crockpot, combine all ingredients EXCEPT tomato sauce, meat and vinegar. Cover and cook at LOW setting until lentils are very tender when mashed with a fork (7 1/2-8 hours. Remove 2 cups of the mixture and whirl in a blender or food processor until pureed. Return to cooker. Increase heat setting to high and add tomato sauce and meat. Cover and heat about 30 minutes more until meat is heated through. Stir in vinegar.

Our variation:

In saucepan Cook Knackwurst and slice into 1 cm slices, continue cooking until well cooked.

In frypan cook carrot and onions, when nearly cooked add garlic

Drain two cans 400 gm Brown lentils

When carrot onions are cooked add to knackwurst, add jar of Five Brothers oven roasted tomato and garlic sauce

Add 3 cups water 4 stock cubes (chicken), 3 or 4 tabs of oven roasted capsicum, 2 teaspoon fresh chopped Rosemary

1 small dried chilli (less seeds), fresh ground pepper, 1 teasp salt and 2 tabs of red wine vinegar

Boil 10 mins

Modified a long time ago from a recipe from Hungry Monsters, the variation turned out a rich chilli like dish. Yum.

You know, it is a little bit strange to look into people's freezers. I don't know a ton about you and now I think you have a LOT of children....or you are very good at stockpiling. I think if I take a picture of the inside of my freezer I may need to post it on a handyman blog to find out why it is leaking water. Thanks for the recipe. I always love trying something new.

The chest freeze in the garage is better..the meats are sorted and there is only a handful of misc. things.
I might half to try that recipe with the mac and cheese....I'll check to see if my library has Last light. SOnds interesting!

I wouldn't be brave enough to take a pic of any of my freezers! LOL We keep cheese in ours all the time, especially since we buy each kind in case quantity (sometimes more, sometimes a bit less), especially when we catch it on sale. The book you mentioned sounds like a very interesting read.
