Wednesday 16th

Breakfast:  muesli, milk, tea
Lunch:  2 fried eggs on toast, toast and Vegemite, tea
Afternoon tea:  small banana, peanuts
Tea:  Pork Mince with Brussels Sprouts

Here is a recipe that I mentioned on Joolz blog.  I have a few of Peter Russell Clark's recipe books, there is a favorite recipe in each one I think.  They are probably available on ebay.  The titles start with Peter Russell-Clark's... in this case Family Cook Book.  These are metric recipes cups are 250ml rather than the US 200ml.  Tablespoons are 20ml rather than the US 15ml. Joolz book Symply Too Good To Be True is available at my library, so I am going to read it!

Quick Microwave Banana Porridge

1 1/2 cups quick cooking oats
2 cups hot water
1 cup milk
1 banana, mashed
Light Philly Topping, for serving*

Combine oats and water in a large mixing bowl.  Microwave on high for 5 minutes.

Stir in the milk and banana;  top with a delicious dollop of Light Philly Topping and fresh fruit.

Serves 4. 

Porridge, an old-fashioned breakfast is made deliciously creamy by adding the Light Philly Topping.  (I think I made the banana porridge without the topping and it was still nice.)

*Light Philly Topping

250g tub light Philadelphia brand cream cheese
1 tablespoon honey
1/2 teaspoon ground cinnamon
1-2 tablespoons fruit juice, eg. lemon, orange, peach

Combine all ingredients.  Cover and refrigerate, use as required.  Serve with hot peaches, banana porridge and other breakfast cereals and stewed fruit.

I have a few bananas, and some cheese I think, but I am going to use them I hope to make banana muffins.  Bananas were very cheap this week.  I also found this recipe for Banana & Coconut Porridge.  There are three other banana porridges on the site here.  My daughter who is 7 eats porridge, mostly from the box, she had sachets this week for a change.  She has quick cooking oats, and they take 1 1/2 minutes.  I find the oats these days seem harder than they were.  My preferred way of eating them (they don't keep me full for as long as muesli or my 4! weetbix though, is:  sprinkled with brown sugar while hot, let melt, fill bowl up with milk, cut holes in it here or there, and start eating!  However, the bananas should do the trick to last until lunchtime. A couple of other porridge recipes here.  I don't know where my original recipe for normal oats is for the stovetop.
