This looks like a great meme. I am already doing Fall Into Reading, but this is slightly different. It is nearly December everywhere so I had better be quick!

A couple of nights ago I was reading from my Nightstand:

Impressions of Food by SPC. It was written in 1985 and has pictures of the workers at SPC in Shepparton in Northern Victoria, Australia. Since my MIL worked there around that time I thought it was a great snapshot of history. The photography is lovely and I found two recipes I like. I mentioned the story of this and another book here.

Pork Loaf with Apricots

1 x 425g can SPC Apricot Halves, drained
500g pork or pork and veal mince
2 tablespoon crunchy peanut butter
1 cup chopped beanshoots
1 small red pepper, chopped
1 small green pepper, chopped
1 tablespoon soy sauce
1/2 teaspoon salt
1 egg
1 tablespoon chopped parsley
freshly ground black pepper to taste
2 tablespoon SPC Savoury Plum Sauce

Reserving half the apricots for garnish, roughly chop the remainder. Combine all ingredients except plum sauce, adding chopped apricots last. Form into an oblong shape on a baking tray and bake at 180oC for 1 hour. Brush with plum sauce 10 minutes before end of cooking time. Accompany with remaining apricot halves. Serve hot or cold with vegetables or salad. Serves 4-6.

Aromatic Lentil Curry

1 tablespoon curry powder
1 tablespoon freshly grated root ginger
2 cloves garlic, crushed
1 teaspoon each, chilli powder, cumin and coriander
2 tablespoons oil
250g cauliflower pieces
1 onion, chopped
2 sticks celery, chopped
1 carrot, chopped
1 small parsnip, chopped
1/2 cup SPC Apple Sauce
1 cup brown lentils, soaked as directed on packet
1 x 425g can SPC Tomatoes
2 cups water
1/2 teaspoon salt
freshly ground black pepper

In a large saucepan, fry curry powder, ginger, garlic and spices with oil for 2 minutes. Add vegetables and toss through. Add remaining ingredients and simmer until sauce has reduced to desired consistency and vegetables are tender. Serve with steamed rice, yoghurt and a selection of sambals eg. fruit chutney or pickles, sliced banana, sultanas, shredded coconut. Serves 4-6.

Part of the appeal to me of this recipe is the apple sauce that came in our Chrisco hamper delivery.
